a christmas light timer, such as those you can pick up 75% off at drug stores in January, any kind of ac-powered cassette recorder, and you're set. Set up the time to come on only at a certain time of day when people are there, set the recorder to voice-activated mode, and keep it well hidden.

www.dealextreme.com has a few nice voice recorders hidden in pens and whatnot that would probably work.  You could tear out the electronics and put them somewhere else if you wanted to.

Grab a cheap cellphone.  Set it to silent and auto-answer.  Plug in hands-free headset.  Hide it very well and place headset microphone in desired listening position.  When you want to listen, phone it and viola, you can here whats going on!

Just remember, you didn't get this from me! ;->

Naw, bugging is a Federal offence and can land you in the pen.  How about building something else like say an AM radio and learn the fundamentals of radio reception in the process.  It's not boring stuff.
