Here's a version we just tried: take a pint of your favorite plain yogurt, a big bowl, a wooden spoon, some string and/or rubber bands, and a clean non-fuzzy cotton dish towel. Line the bowl the clean dish towel, and pour in the yogurt. Twist the yogurt up in the center of the towel, making sure it's all contained, and tie it off with the string and/or rubber bands. Run the wooden spoon across the top of the bowl, and hang the yogurt-filled towel off the middle with the remainder of the string. Leave the towel full of yogurt to drain overnight or until most of the whey has drained out. Unwrap and check your cream cheese. Add a bit of salt and any other seasonings to taste. Ours was delicious.
