Melon can easily be carved--just cut a slice along a watermelon for instance and then you have a flat circular disk that you can carve shapes out of. If you are thinking 3-D you would try using melon or for a less slippery challenge, try carving things like apples (blow fish!) or a cucumber if you aren't stuck on only fruit.

Pineapple would work well as a body. Grapes would look good as eyes. Try using bananas for fins. I'm not sure if i am thinking like you or not, but i hope this helped some.
