Yes, vegetable shortening or liquid oil will work. If you choose to use liquid oil the texture of the baked good will typically be more dense since air bubbles won't be formed during creaming.
You can also use coconut oil as a substitute, but you will need to reduce the amount. Use 3/4 cup for every cup of shortening the recipe calls for. Coconut oil also has a very distinct taste so make sure you like the flavor before using it!
