Immersion - because they are immersed in the water.

Good catch. I was assuming that was a brand name.
These heating elements are made of something called mineral insulated conductor cables. (MICC) In an MICC cable, the wires are firmly held in a densely packed powder,. inside a metal tube. The element wire, and a large quantity of the powder are placed inside a "big" tube, and then drawn down through successively smaller dies, stretching and thinning both the element and the sheath, whilst also compressing the insulating powder. With great care, the element can be kept away from the walls of the element, and the element can still be formed into shape (usually only once) after being made.

When used as electrical wires, the resistive elements are replaced with pure copper and the resulting wires will work to several hundred degrees, making them ideal (and once mandatory) for fire alarm circuits.
I stand corrected.
