what happens to quarks in copper atoms when electricity is ran trough copper wire?

I want to know because I have always wonderd this

Nothing at all. Electric current is carried by the collective motion of electrons in the metal.

The quarks are the constituents of the protons and neutrons within the copper nuclei. It would take energies millions or billions times higher than you see in an electric current to do anything at all to the nuclei.
