what's the universal math method of calculating how good someone is good in paintball or airsoft?

The principles of distance and degree of difficulty in respect to the accuracy of the shooter can be best compared with that of a marksman. Here's a link to a document from the U.S. Army, Military Performance Division and Research. It gives the mathematical equations that you are looking for and explains the factors used in making these calculations.
use an average of how many paintballs you hit against how many you fail, games you win VS you lose, people you "kill" VS people other player "kill" and then see how good the results are. If possible put in percentage to be easier.

Look into how stats for other sports are compiled.
You will need to decide what the relevant data is. (shots, hits for, hits against, time, etc). It needs to be averaged or weighted in some way so you can compare players that just started with players with lots of time under their belts.

Look into how FPS multiplayer games, like the CoD or Battelfield series, keep track of stats for comparing players. Since paintball and those games are supposed to be simulating the same thing it may be the easiest to adapt.
Do a google search for golf handicapping. Where it says "golf" just read paintball. Where it says "stroke" you change it to shot. Make sure you read every page on Google, you don't want to miss anything. Then come back and make a ible.
