Gluten and Dairy Free Treats

I am new here but would love to see if anyone has fun foods for a gluten/dairy free household! We are so much happier without that in our house and would love to see other posts on this topic.  Especially lunch ideas for high school lunches.

If you have access to a Costco, the Kirkland brand Cashew Clusters are gluten free. My husband and son both like them as afternoon snacks.
Off the top of my head:
1. Almond butter and celery sticks with the almond (or other dipping sauce) packed in a separate container. I finally bought a sleeve of single-use plastic tubs from a restaurant supply store for the spreads and dressings. They are recycleable, before anyone whines about that.

2. Beef jerky

3. Home-made granola featuring oats, pepitos, and slivered almonds. I will check my recipe file when I get home. I think the Almost Alton Granola could be gluten and dairy-free with a little tweaking.

4. Is chickpea flour gluten free? It is made of ground chickpeas and is sold as Beesam at my indian market. If it is, rotis would be a very versatile ingredient. They can be used as flatbread or wraps. Google [Bal Arneson Roti] for recipes. Her books also contain some non-dairy recipes since she grew up in a vegetarian household.

5. I've got a great Thai coleslaw recipe at home that would probably work. I'll post it when I get a chance.

6. Check out "1001 Low-Carb Recipes" by Dana Carpender. Many low-carb recipes are also gluten free or can be adjusted to gluten free. Some of the recipes are great and some are an acquired taste. This is where my Thai coleslaw base recipe came from.

7. Google "Alton Brown Barley Salad". If barley contains gluten, you could subsitute brown rice. I actually like brown and red rice better than barley, but barley has a lower glycemic load.
Still looking for the granola recipe.
Here's the slaw recipe. I have changed it from the original published version, but it is close enough that credit is still given to Dana Carpender:

Sesame-Almond Napa Coleslaw
Adapted from 1001 Low-Carb Recipes by Dana Carpender

Base:
1 small head or ½ large head Napa cabbage, shredded into ¼-inch slices

½ Cup sliced green onions

½ Cup slivered almonds
2 Tablespoons sesame seeds (if raw, toast with almonds, if pre-toasted, sprinkled directly into slaw)
1 teaspoon butter (or oil of choice if going non-dairy)
Melt butter in frying pan and sauté the almonds until lightly toasted. Stir constantly and do not walk away since they can go from blonde to burnt in 10 seconds.

Add green onions, sesame seeds, and almonds to the shredded napa. Toss to combine.

Dressing:

2 Tablespoons olive oil
1 ½ Tablespoons Mirin (rice wine vinegar)
1 Tablespoon fish sauce or soy sauce
2 Tablespoons brown sugar or artificial sweetener
2 Tablespoon Almond butter
1 Tablespoon sesame oil, preferably dark

Whisk the dressing together and drizzle over the slaw just before serving. Leftover dressed slaw will wilt from the salt in the dressing so I save the base and dressing in separate containers and dress the slaw one serving at time.

I think pappadams would fit the bill (as a treat, not a lunch food).
Home-made 8-bean soup. If the pre-mixed bag has some forbidden ingredients, buy 2 ounces each of a bunch of beans, lentils, and a little rice for thickener from the bulk bins. The basic instructions are on the bag of pre-mixed beans. I always toss out the seasoning packet and use sauted vegetables and some ham or chicken stock plus salt and pepper for flavor.
Chex mix made with only the gluten-free chex flavors, and extra nuts (walnut, pecan, slivered almonds, pistchios) in place of the bagel chips and pretzels.
Oh yeah, Alton Brown's ginger glazed almonds are a great healthy snack food. Just google [Alton Brown ginger almonds]. I make that recipe as published.
