  • Cherry Salsa
    Cherry Salsa
    by annahowardshaw

Cherry salsa is a fantastic choice for a canning project.  There is a short window of time to prepare it fresh, it can be hard to find commercially and it is super-delicious! Since cherries are on the pricey side, towards the end of the season is the best time to take advantage of sales (unless…

  • 1950's Sweet Corn Relish
    1950's Sweet Corn Relish
    by asimone2

When you think about corn relish, you probably think “that’s so 1950s summertime picnic.” Well, at least that’s what I think. But retro food is making a big comeback. After all, canning and preserving is quite an old school trait in and of itself—and one that I’ve grown to love dearly. This swee…

  • Gingered Hot Pepper Jelly
    Gingered Hot Pepper Jelly
    by dracidephgm

In a previous instructable I showed how I make Minted Hot pepper Jelly http://www.instructables.com/id/Minted-Hot-Pepper-Jelly.  Late last summer we ran out of mint but we still had hot peppers growing in large quantity so I decided to replace the mint with Ginger and we really liked the outcome.…

  • Spiced Blueberry Jam
    Spiced Blueberry Jam
    by Eldjotnar

This is an easy and delicious recipe for Spiced Blueberry Jam. The recipe itself is from Alton Brown, so you know it has to be good. It has a strong blueberry flavor, with hints of cinnamon, nutmeg, and anise. The jam goes well with just about everything, from toast, chicken, pork (my favorite), …

  • Roasted Red Plum & Thyme Jam
Roasted Red Plum & Thyme Jam
    by kitchentablescraps

For this jam, I roasted the red plums which concentrates their flavor and adds a pleasant note of caramelized richness. It also allows the beautiful red pigment and tartness of the skin to seep into the sweet yellow flesh of the plum. Then I boiled the resulting juice together with the peels (whi…

  • Orange, Fig and Sage Chutney
    Orange, Fig and Sage Chutney
    by nonreactivepan

On a warm San Francisco Sunday we decided it was necessary to get some of our nice late Summer fruits canned up for the coming Fall. The chutney I ended up with is sweet and tangy, with a nice hint of sage, which is perfect with roast, especially pork. It's a very simple recipe, and the way I di…

  • Rhubarb Cherry Jam
    Rhubarb Cherry Jam
    by yossy - apt2bbakingco

Summer is not exactly my favorite season in NYC. I will never get used to the humidity that makes everything feel sticky, the sweaty walks to and from the grocery store, and let's not even talk about going to the laundromat. It may get ugly. So, I've been trying to remind myself of all of the gre…

  • A How To: Canning Pickled Red Beets
A How To: Canning Pickled Red Beets
    by zoedawn

I love me some pickled beets. So sweet. They are such a pretty addition to a bland winter plate. And beets are loaded with nutrition, though the amount of sugar used might just counteract with that. *Please note: I do not necessarily follow the tested methods of canning. But this way has always …
