10-Minute Toffee by yota

This recipe is adapted from one for peanut brittle. Personally, I'm not a fan of the stuff. But it's terribly easy to turn a simple brittle into a simple toffee, and who am I to say no to that?

With the aid of that miraculous culinary invention, the microwave, it only takes 10 minutes of prep time to make this delicious treat, and it's practically fool-proof.

Step 1: Materials

Ingredients:
1 cup raw pralines
1 cup granulated sugar
1/2 cup light corn syrup
1 tbsp butter
1 tsp vanilla
1 tsp baking soda

The nuts, even if you choose to substitute peanuts, walnuts, cashews, almonds, whatever, MUST BE RAW! They will cook in the sugar mixture, and if you use nuts that have already been roasted, they will burn, and nobody wants that.

Tools and Cookware:
Microwave
Microwave-Safe Bowl
Silicone/Non-Stick Spatula
Cookie/Baking Sheet
Parchment Paper or Silicone Liner
Measuring Cup and Spoons

I know that microwave oven powers tend to vary by model, but use your best judgement; some pointers will be given along the way.

We don't have corn syrup here in Croatia. Can I substitute it with honey?

If the cost of honey isn't too bad, then it might be worth a shot; sounds like it would produce a pretty good twist on the flavour. Honestly, though, I'm not sure.

However, according to this website, you should be able to just substitute 1/14 cups sugar plus 1/3 cup liquid for 1 cup of corn syrup (so that would be halved for this recipe):

You can do without the nuts, but leave out the baking soda and you'll end up with something too hard to actually eat! If you've got baking powder instead, you can just double the amount to substitute it for baking soda.

Hooray for 10 minute toffee! I think people are often intimidated by the idea of making candy but this is the perfect recipe to show them it's worth a try. I can't wait to try some!

If you leave out the butter and vanilla and swap in another flavour, you've got hard candy. It's really simple. By the way, your Harry Potter candy 'Ibles have inspired me to try a few of my own (not Weasly products, though)! Well done!

I've got a few other 'Ibles on the burner, but I'll post you a reply here when I get around to it. It's very simple, just a matter of butter:vanilla:baking soda ratios... Plus, I can never actually find raw peanuts anywhere!

Not really. I just prefer it that way. You'll still get that nice buttery-vanilla toffee flavour so long as you follow all of the other directions.
