These pie are squared but you can make yours with round pie tins. This is a more savory pie than the traditional sucrose and white flour recipes. If you want some sweetness I suggest going a la mode with some vanilla ice cream. The recipe makes one pie.

Step 1: Make Your Crust

Crust ingredients:
3 1/4 cups walnuts

1 1/3 teaspoons baking soda

1/3 teaspoon salt

3 tablespoons melted butter

Instructions:

Grind the nuts in a blender or food processor until finely ground. Do this in small batches and put each batch in a mixing bowl until you have enough. Mix your baking soda, salt together and mix into melted butter. Thoroughly mix your butter mixture with the nut. With a spatula place your batter in your (9 inch) baking pan. Fingers may be best for spreading the batter. Use the spatula to even it out. Place your baking dish on a cookies sheet and bake for 15 minutes at 350F. Let cool for at least 15 minutes before adding your pie filling.

Step 2: Make Your Filling, Bake and Decorate

Pumpkin Filling Ingredients:

1 can of pumpkin (15 oz)

1 cup canned coconut milk ( or heavy cream)

1 teaspoon vanilla extract

1/4 teaspoon ground cloves

1/2 teaspoon cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cardamom

1 pinch of salt

3 tablespoons maple syrup

1 tablespoon arrowroot powder (you can use cornstarch as thickening agent but arrowroot)

3 eggs

Instructions:

Mix together all dry ingredients together. Mix in maple syrup. Stir in pumpkin. Wisk eggs and add to the pumpkin mixture. Pour into the pre-baked crust. Don’t overfill the crust. Bake for 50 minutes or until a toothpick comes out clean. Cool it completely before serving. To make your whipped cream Pi symbol you can use a homemade stencil. Draw your symbol or print from the internet onto a thin piece of card stock. Place your symbol on your pie and spread the whipped cream over the template. Care fully lift off the paper. Or, if you're inspired you can try to shape it freehand. Smooth out the curves and edges with a butter knife. It's much easier to draw with canned whipped cream.
