Because sometimes you want just one cupcake, not 24. And sometimes you want to be able to eat 7 minutes from when you start thinking about it, including prep work and cooking time. This single serving microwave chocolate cupcake takes about 5 minutes to prepare and 2 minutes to cook- perfect week night treat!
Step 1: Ingredients
-3 Tbs all purpose flour
-1/4 tsp cinnamon
-2 Tbs granulated sugar
-2 Tbs unsweetened cocoa powder
-1/4 tsp baking powder
-1/8 tsp salt
-1/2 tsp vanilla extract
-1/2 large egg (scramble the egg in a bowl and then just use half)
-2 Tbs vegetable oil
-2 Tbs water
Optional: frosting/ decorations, however you like them
Step 2: Mix Ingredients in a Cup
Any microwave-safe container will work just fine- I used a glass cup, but a mug or jar would also work.
Step 3: Microwave
Microwave the mixture for about 2 minutes on high- like any other cupcake, you can tell it's done by inserting a toothpick to check whether it will come out clean.
Step 4: Frost/ Decorate
Now is your chance to get creative. I used vanilla frosting and chocolate chips, but you can use whatever you like.
