Introduction: 2 Minute Single Microwave Cupcake

Because sometimes you want just one cupcake, not 24. And sometimes you want to be able to eat 7 minutes from when you start thinking about it, including prep work and cooking time. This single serving microwave chocolate cupcake takes about 5 minutes to prepare and 2 minutes to cook- perfect week night treat!

Step 1: Ingredients

Ingredients:
-3 Tbs all purpose flour
-1/4 tsp cinnamon
-2 Tbs granulated sugar
-2 Tbs unsweetened cocoa powder
-1/4 tsp baking powder
-1/8 tsp salt
-1/2 tsp vanilla extract
-1/2 large egg (scramble the egg in a bowl and then just use half)
-2 Tbs vegetable oil
-2 Tbs water

Optional: frosting/ decorations, however you like them

Step 2: Mix Ingredients in a Cup

Any microwave-safe container will work just fine- I used a glass cup, but a mug or jar would also work.

Step 3: Microwave

Microwave the mixture for about 2 minutes on high- like any other cupcake, you can tell it's done by inserting a toothpick to check whether it will come out clean.

Step 4: Frost/ Decorate

Now is your chance to get creative. I used vanilla frosting and chocolate chips, but you can use whatever you like.

then u don't use cinnamon ;) i've been making this for a long time, only cacao and sugar and milk instead of water, its great recepy for the kids :D

u can add apple pieces and / or orange or lemon peelings into the mix, it brings xmas to your door :D

Made this tonight & it was great! Very rich, so I divided it in half. I spread canned fudge icing on top of each portion, then drizzled caramel topping over it! Just enough dessert for my husband and I, without the temptation of a second piece!. Yum!

i made the cake as per the instructions but its not a cup cake. the ingredients bake a pound cake. and its a 2 mins cake at 900W in microwave. but its an amazing recp. yummy it is. thanks.

Replace cocoa powder with instant pudding mix and 1/2 tsp of baking powder (instead of 1/4 tsp), and that cupcake is awesome. 2 minutes is perfect in 900 watt microwave.

It was fast, not really easy ... lots of ingredients.
Spongy but dry, chewy, and no taste
I would do it again with more sugar n oil, less chocolate, and maybe milk instead of water.

These were so fast and easy! They did turn out a bit dry so I would try microwaving for less time. I topped them with a little vanilla bean ice cream, hot fudge and a cherry!

tasted good. i used bournvita 5 star because i was out of coco powder. it tasted yum. it expands a lot .and it would be advisable if the microwave time is less than two mins

This is a great recipe to use! My sister and I love it! The first time I tried it, we had followed the recipe exactly but had used whole wheat flour, and then put it in for the recommended 2 minutes, but it turned out a little too dry and chewy for our taste. So, with the next one, I added about a tablespoon of sour cream, and put it in for 1:40 seconds... it was perfect <3 Also, since I want to be able to transport the cake and have other people try it, half of a paper lunch bag that's been sprayed with cooking oil works great as a cupcake liner. Thank you so much for this idea!

I just made this and it's GREAT! It mixes good in a cup but for better results and smoother cake, I would assume mixing it in a bowl would be a little better. I microwaved mine for a minute 30 this time. I might just go with a minute next time, but microwaves vary. Technicalities aside, this is a great recipe that totally works! Thanks for sharing! :)

I made this 2 minutes ago, mostly because I thought "no, that is not real." It's delicious! I will only cook it for 1 minute 30 seconds next time, though, because I like my brownies on the Kilauea side.

My kids and I have been making these for several years. We make ours gluten free by substituing an equal amount of gluten free all purpose baking mix and using the whole scrambled up egg. We have not tried it with cinnamon but we may!
