Introduction: 2 * Pie
This is a two pie recipe, the first one to prepare is a bananna creme, the second is a cherry meringue pie.
The tools:pan, spoon, 2 pie crusts, 3 eggs, flour, vanilla extract, cherry pie filling, some maraschino cherries for decor?!, sugar, 2 gram-cracker pie crusts, and some milk (I used skim milk), salt and some butter. measuring cup and some measuring spoons, or a nice graduated one.
3 eggs (yokes for banana pie, whites for meringue)
1/2 teaspoon vanilla extract (meringue)
approximately 6 tablespoons sugar (meringue)
3/4 cups sugar (banana cream pie)
1/3 cup flour
1/4 teaspoon salt
2 cups milk
1 teaspoon vanilla
two gram-cracker pie crusts
make the banana pie first as it takes 3egg yokes, and you have 3 whites left over (used for the meringue)
Start with heating milk to a boil, add sugar, flour and salt. Cook after boiling for 2 minutes, it will begin to thicken. Add egg yokes, start cooking again, then add butter and vanilla. This step should take about 10-20 minutes.
Poor the heated pie filling over sliced bananas in gram cracker pie crust, I like to cool this pie in fridge and eat cold with whipped cream.
The meringue pie, (or you could simply top the banana pie with it and cook that pie if you only want 1 pie, but 6.283185.....is also fun I think)
anyway, use the left over egg whites, blend till they begin to thicken, add sugar to taste (approximately 6 tablespoons), for me it was approximately 1cup, I have a bit of a sweet tooth. The picture is a pretty good indicator of consistency desired(the pic with the blender pulled out of mix). Also blend in about .5 teaspoons of vanilla, this gives it a nice little kick of smoothness.
fill pie crust with the pie filling used, I used cherry, but I am going to try with blueberry, should be good. Cover with meringue, swirling and shaping with the back of a spoon, then bake in oven till just browned as in pic for me it was 12 min, at 350 deg Fahrenheit. This is also a good pie cold.
Final step, enjoy the pies with friends, over all this recipe gets 2 pies in about 45 min without practice, if your having a hard time getting the time down, try starting with all your ingredients out at the same time.
