Introduction: 3.141592653589793 Blueberry Pie

This wonderful blueberry and cream cheese pie is excellent anytime of the year, but it's especially tasty when you eat it on Pi Day!

Step 1: Ingredients: a Place for Everything and Everything in Its Place

First thing to do is gather your ingredients and get them ready to go. The ingredients for this pie are as follows:

3 cups blueberries
1 teaspoon lemon zest
4 ounces cream cheese
15 grams lemon juice
9 inch crust
265 grams water
3 rounded tablespoons cornstarch
58 grams powdered sugar
97 grams heavy cream, whipped
93 grams chocolate chips

Lay everything out beforehand and you'll thank yourself later. Be both accurate and precise with your measurements, mathematicians like that sort of thing.

Step 2: Crust

Go ahead and bake one of  your favorite 9" pie crusts.

Step 3: Blueberries

In a large saucepan mix the cornstarch, water and lemon juice  until smooth; dump in the blueberries and stir to combine. Bring to a low boil over medium heat and once the mixture has reached a soft boil, cook for another 2 minutes while stirring. Make sure you're gentle with the blueberries, we want to keep the blueberries whole.

Ingredients used:

1 teaspoon lemon zest
15 grams lemon juice
265 grams water
3 rounded Tablespoons cornstarch
3 cups blueberries

Step 4: Cream Cheese

In a mixing bowl beat the cream cheese and powdered sugar until  smooth. Whip the heavy cream in a separate bowl and then fold into the cream cheese mixture. Spread this into your baked, and cooled, pie shell.

Ingredients used:

4 ounces cream cheese
58 grams powdered sugar
97 grams heavy cream, whipped

Step 5: Chocolate

Melt your chocolate chips in the microwave and spread along the exposed edge of your crust, it helps protect your crust from getting soggy from the blueberry mixture.

Ingredients used:
93 grams chocolate chips

Step 6: Bringing It All Together

Since you made your blueberry mixture first it should have cooled enough by now, go ahead and pour it into your pie and let the whole thing cool for about 20 minutes on your counter. After that, chill it in your fridge for an hour or two before serving.

Enjoy, and happy Pi Day!
