5 Minute Vanilla/Sugar Cookie Cake

First off thanks to scoochmaroo for letting me use her basic idea from 5 minute chocolate cake! So I went on experimenting with her recipe and I made a cake that tastes just like a sugar cookie! I hope you enjoy and check out her Instructable if you like chocolate!

Step 1: Ingredients

Here's the list of stuff you'll need:
  • microwave (most important thing!)
  • coffee mug
  • 4 tablespoons + 1/2 teaspoon flour
  • 4 tablespoons sugar
  • 2 tablespoons whisked egg - 1 egg is too much, 1 egg white is too eggy, 1 yolk is too dense, but 2 tblsp is just right!
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 1/2 tablespoon vanilla
  • 1 teaspoon baking powder

Step 2: Batter!

Put all ingredients into the mug in the order listed and mix until you get a batter. (Forgot to take pictures. DOH!)

Step 4: Eat!

I only changed one thing to this recipe and it still tasted amazing! I didn't put in the egg but I added a tiny bit more milk and oil.
THIS WAS THE BEST THING I HAVE EVER TASTED!!!!
DUDE THIS IS AMAZING i just made this and i wanted to say that it works for gluten free people too just use your baking mix instead of flour!
I JUST made this and albeit flowed over the top, it was DELISH <3
Totally satisfied my craving.

It tasted even better with this quick-cream cheese glaze that I mixed into the cooked cake.

I made the glaze by mixing::
2tsp Cream Cheese
2tsp Water
2tbs confectioners sugar

I JUST made this, everything is amazing, only problem was it overflowed so i would want to try it on a paper plate next time and just watch it. My puppy loves it too shes crying for it.

1 teaspoon of baking powder seems like a lot for this small a recipe, so does 1/2Tablespoon of vanilla extract--you would use those amounts in a recipe for a whole, full-size cake! I have adapted scoochmaroo's recipe for the 5-minute chocolate cake (adapted for Weight Watchers levels) and I only needed to add 1/8 teaspoon of baking powder and a similar amount of vanilla, and it worked well. I used egg beaters in that recipe, and they worked fine, plus I subbed out applesauce for all but 2 teaspoons of the oil, and that also worked well. I'm going to try adapting your recipe along the same lines, so that it, too, will work with my program. Thanks for a great recipe!

Wow..... Instructables never ceases to amaze me! People like you are the reason i joined. and wow, i think you were right about it being too much. I tried it your way and wow, simply wow. Perfect! Please feel free to adapt this to whatever you need. you can make it an instructable, and you do not have to give credit to me. I would rather you make your recipe into an instructable and enter it into some contests. you deserve it! Fireworks (from thunder over louisville) to show your achievement!

Here is a little tidbit about Thunder Over Louisville, Louisville is the largest city in Kentucky. Every year leading up to the Kentucky Derby we have the Kentucky Derby Festival. To start the festival we have the largest fireworks display in the country (if not the world)! It lasts about 30 minutes and the fireworks do not stop. We have them going off from barges on the Ohio River and the Clark Memorial (2nd Street) Bridge. Thousands of people come and celebrate. All of this information is coming from a Louisvillian (Louisville native) so I am pretty sure there are no errors! If there are just comment with corrections. Hope you enjoyed my little tidbit!

It was ok. Tasted kind of like homemade playdough at first and it was pretty tough. Maybe something to lighten it up a bit?

Hi, Garrettg, I've had a blast experimenting with your recipe, and have come up with a variation of my own--if you'd like to turn it into an instructable, I'd be honored! Herewith:
5-Minute Spice Cake
4 T flour
3 T packed brown sugar
1/8 tsp baking powder
Pinch salt
1/4 tsp cinnamon
1/8 tsp allspice
1/4 tsp ginger
Whisk together and set aside
2 T low fat plain yogurt
2 T egg-beaters (or 2 T whisked egg)
1 T dark molasses, NOT blackstrap
2 tsp vegetable oil (I use canola)
Splash vanilla
Whisk together, then add to dry ingredients, and blend til smooth. Cook in microwave on high for 2-3/4 to 3 minutes. Test by lightly touching the top, it should spring back, and a tester inserted in center should come out clean.
My husband and I shared this, and it was plenty for the two of us. And it was yummy! We have a large, rubbermaid microwave mug, and this caked filled it almost to the top.
It smelt really great :D but it was just really hard and bland tasting.

I made this--just minutes ago!--and it turned out beautifully. As I discussed below, I subbed out 2Tablespoons of applesauce for 2Tablespoons of the oil, and instead of milk, I used plain low fat yogurt. The resulting cake was tender, light, and fluffy, and perfectly delicious. I think I may attempt making it with softened butter instead of oil, for that unmistakeable flavor. I will keep y'all apprised of the results of all this experimentation. In any case, again, thanks for the yummy recipe!

When I made the 5 minute chocolate cake, I added 1/8th tsp of baking powder, to give the cake a bit of "lift". I think it would help here, too.
