Step 1: Pastry

375g / 2 and 3/4 Cups Plain Flour

200g / 3/4 Cup Unsalted Butter

2tbsp Caster Sugar

1/4tsp Salt

2 Egg Yolks

4tbsp Water

Begin by adding the flour, butter, sugar and salt to a food processor and mix together until you have fine bread crumbs. Alternatively, you can do this by hand by rubbing the ingredients together through your fingertips.

Next, whisk the egg yolks and water together and combine with the breadcrumbs to form the dough. Cover with cling film and leave to chill in the fridge for 30 minutes.

Step 2: Cinnamon Sugar

100g / 1/2 Cup Light Brown Sugar

1tbsp Plain Flour

2tsp Cinnamon

Mix all the ingredients in a bowl and leave to sit.

Step 3: Create Your Pop-Tarts

Once your dough has chilled, roll out on a floured surface until the dough reaches about a 1/4 of inch in thickness. Using a ruler and a knife, cut out rectangles 7cm in width and 10 cm in length. Mix together an egg and some water and bush over all the rectangles. Using a fork, prick holes in half of the rectangles. on top of the other half, spoon on some of the cinnamon sugar. Take the rectangles with the holes and place over the rectangles with the cinnamon sugar and seal together with a fork. Once your pop-tarts are formed, bake at 200 degrees C for 20 minutes or until golden brown.

Step 4: Icing

Icing Sugar

Milk

Vanilla Extract

+ Gel Food Colouring

For the frosting, mix together the icing sugar with milk and vanilla. It's important the icing is thick so it doesn't run down the side of your pop-tarts. Separate the icing and add gel food colouring. Pipe on the icing using zip lock bags and use a toothpick for the fine details.
