Introduction: Almond and Walnut Cookies

About: I'm a physics and chemistry teacher at a public school in Maryland and active in my local science teacher's association. I love building things and am teaching myself how to use arduino in electronics projects…

There are lots of variations to the basic cookie. This recipe is easy enough to make with children and they can even lick the bowl afterwards because it is vegan.

To make the cookies you will need:

a mixing bowl
an oven
a mixing spoon
a blender
cookie sheet

flour (you can use white or whole wheat)
canola oil
baking soda
oatmeal
nuts (any nut will work, combinations of several nuts adds a nice flavor)
maple syrup, honey, or agave nectar

Step 1: Preheat the Oven

Preheat the oven to 375 degrees Fahrenheit.

Step 2: Make Oat and Nut Flour

Measure out one cup of oatmeal and one cup of nuts and put them into the blender.

Blend the combination to flour consistency.

Step 3: Mix the Batter

In a mixing bowl combine the oat and nut flour with:

1 cup of wheat flour (all purpose or whole wheat)
1 teaspoon or baking soda
1 cup of maple syrup (or your favorite liquid sweetener)
1 cup canola oil

MIx the batter thoroughly.

Step 4: Form the Cookies

Form the batter into balls the size of a walnut and put them onto a cookie sheet.

Flatten each ball with a fork.

Step 5: Bake the Cookies

Bake the cookies for 12 to 15 minutes in a 375 degrees F oven.

When they are finished, the cookies should be lightly browned on the edges and crisp through.

Enjoy your cookies!
