Introduction: Amazingly Light, Oatmeal/nut Cookies

High-protein, light and chewy. Just, wow. My best cookie recipe to date!

Step 1: Mix All Dry Ingredients

Just under 3 cups of oatmeal

1/2 cup each of almond flour and coconut flour

1 tsp of nutmeg(or cinnamon)

1/2 tsp of baking soda

1/4 tsp of sea salt(pink/himalayan)

Mix!

Step 2: Add Wet Stuff

(mix each of the following into the dry mix)

1/2 cup each of honey and maple syrup

1/2 cup of butter 1/4 cup of coconut oil

1 tsp of anise extract

1 egg

Step 3: Ready Oven, Chop/grate Add-ins

Pre-heat oven to 375 F

Chop nuts, whatever you have on hand, about 1/2 cup

Grate very dark chocolate, about 1/4 cup

Add into mix

Step 4: Cookies!

Drop large spoonful amounts onto cookie sheets, heaps about 1.5" across

Bake for 12 minutes, cool for 10, then transfer to wire rack

Display on lovely plate and watch them disappear!

Light and Nutritious... yay!
