Introduction: Apple Blueberry Crisp

About: Michael's Test Kitchen - FOOD - SUGAR - RECIPES

Blueberries added with apples make a great twist on the classic apple crisp, which works well for breakfast, and dessert anytime of the day.

If you want the recipe to make more, then increase the amount of apples and blueberries, and put it in a 9×13 dish instead of the smaller pan.

This recipe is also on my food blog: Michael's Test Kitchen

Step 1: Ingredients

Ingredients: (serves 6)

Topping

⅔ cups flour

½ cup oats

⅔ cup brown sugar

¾ teaspoons baking powder

½ teaspoon cinnamon

¼ teaspoon salt

½ cup cold unsalted butter

Filling

4-5 apples

3 cups blueberries

1 teaspoon cinnamon

⅛ teaspoon nutmeg

¼ cup flour

¼ cup brown sugar

1 tablespoon lemon juice

3 tablespoons melted butter

¼ teaspoon salt

¼ teaspoon vanilla

2 tablespoons milk

NOTE:

If you want to serve more people, simply increase the amount of apples to somewhere around 8 apples, and of course increase blueberries if you want to. Then put the mix into a 9x13 instead of the smaller pan called for. (which is what i did). Then of course leave in the oven longer.

Step 2: Crumb Topping

Mix together flour, oats, brown sugar, baking powder, cinnamon, and salt in a food processor, or bowl.

Add in chunks of cold butter and process or manually cut in the butter until it is small crumbs. Set in fridge until needed.

Step 3: Prep the Fruit

This is the part that makes most apple desserts time-consuming.

For filling, core, cut, and peel apples, and put them a large bowl. Preheat oven to 375 degrees.

There is an easier way to prep the apples (much easier). You need the Apple Peeler Corer Slicer. It's something like this.

Prepare the blueberries. If they are fresh, then just wash them. If they are frozen, rinse them in a colander, and let them dry before using.

Step 4: Filling Sauce

Stir flour, cinnamon, nutmeg, melted butter, lemon juice, sugars, milk, salt, and vanilla in a small bowl until combined.

Step 5: Mix It Up

Pour filling mixture over apples, and toss to coat completely.

Step 6: Layer It in a Pan

Place apple mixture in a approximately 8×12 baking dish, layer all the blueberries evenly on the top of the apples, and sprinkle all of the crumb topping over it, evenly, until completely covered.

Step 7:

Bake in preheated oven for around 35 minutes until mixture is bubbling, and topping is brown.

Step 8: Done!
