Introduction: Apple Brie Pastry

An absolutely delectable dessert with a few healthier modifications!

Step 1: Gather Your Ingredients

You will need:
Puff pastry sheets or phyllo dough, both should be readily available at your local grocery store in the frozen section. For this, I went puff pastry style.
Pie filling - The cherry, lime, raspberry, it's up to you. I opted for apple filling which also comes in a light version that is significantly nicer on the hips.
Brie - also comes in a lighter version, a good 30 calories or so less than the classic kind.
Cooking oil, I used spray but you can use whatever floats your boat, it's just to coat the pan.
Nutmeg, cinnamon and a bit o' honey.

A pan or casserole dish - I used a muffin pan to give better individual portions and it makes it look nice and pretty for presentation but a casserole dish will do just fine.
A cup or cookie cutter
And a plate of course.

Step 2: Preparation

Phyllo dough and pastry sheets need to thaw for a good 40 minutes, so just keep this in mind because when it is not thawed it just becomes a mess that's difficult to work with.

Grease up your muffin pan.


Step 3: Get Started!

Once all that's done, lay the dough out onto a cutting board and grab your cup. Use one close in size to the pan cups to make your life easier. Cut out your circles with the opening of the cup and they should easily pop right out.

Cut up slices of brie, don't go crazy but don't be stingy. You want it to be nice and creamy to balance the fruit.

Lay each circle into the cups and lay the cheese slices over. Now, put in pie filling.
The fruit I had was fairly large so I diced it and then put it into the mix.

Plop another dough circle on top and sprinkle a lil' cinnamon and nutmeg on top...or save that for late in plating if you find that to be better.

Step 4: Bake 'em!

Preheat the oven to 450° then shove those babies in there!
15-20 minutes should do you right. The tops should be nice and brown around the edges.
Take out, let them cool for about 5 minutes but you want them to still be nice and warm when you serve.

Step 5: Voila!

Plate it!

Put it on a plate and drizzle with a little honey either on the pastry or on the side to dip it in.
Sprinkle some nutmeg and cinnamon if you didn't before and voila! You've made an Apple Brie pastry.
