1 pie crust (pie, graham cracker, whatever)
2 cups apple cider
1 cup sugar
1/2 cup sour cream
1/4 tsp salt
4 large eggs (I used medium and it turned out fine)
1 cup heavy cream
1/2 tsp cinnamon
1) in a medium saucepan, boil the cider until it's reduced to about 1/2 cup. This should take about 10 minutes on medium high heat. Transfer to a bowl and let it cool
2) Once cool whisk in 3/4 cup sugar, the sour cream, and salt. Once mixed, whisk in the eggs (I did them one at a time to make sure it was mixed well).
3) Pour the custard into the pie shell . Bake pie at 350 degrees in the lower third of your oven for 35-40 minutes (until the custard is set around the edges and the very center is slightly jiggly) Let the pie cool completely!!!
4) In a medium bowl (once your pie is cooled) using an electric mixer beat together the heavy cream, remaining 1/4 cup sugar, and the cinnamon until firmly whipped (you are making whipped cream so you want the consistency of whipped cream. Took about 5 minutes for me). Mound the whipped cream on top of the pie and serve!
