Apple Cinnamon Pancakes features pancake batter with the addition of brown sugar, cinnamon and apples. A great way to add fiber to your pancakes!
Step 1: The Ingredients:
1 cup flour
2 tablespoons brown sugar
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1 cup milk
1 tablespoon butter, melted
1 teaspoon vanilla
1 cup shredded apples, about 1 1/2 small

Step 2: The Instructions:
In a medium bowl whisk together flour, brown sugar, baking powder and salt.
In a small bowl whisk together milk, egg, butter, and vanilla. Add to dry mixture and mix until just combined. Mix in apples.
Coat griddle or nonstick skillet with cooking spray or butter. Pour about a 1/4 cup batter onto griddle and cook until the edges are dry, flip and cook until browned, about 2-4 minutes per side.
