Introduction: Atayef With Walnuts, Pancakes Dessert

This is a simple and delicious traditional middle Eastern dessert.

It is made up of three parts: The pancakes, the stuffing and the syrup.

Step 1: Ingredients

Stuffing:

  1. 285g walnuts crumbs
  2. 1/2 a cup of sugar
  3. 2 tsp rose water
  4. 1/2 tsp orange blossom water

Pancake batter:

  1. 2.5 cups of milk 3.25%
  2. 2 cups of flour
  3. 1/2 tsp baking powder
  4. 2 eggs
  5. 1/4 tsp vanilla extract
  6. a pinch of salt
  7. 1 tsp of rose water
  8. 1 tsp orange blossom water

Syrup:

  1. 1 cup of sugar
  2. 1/2 a cup of water
  3. 1/2 lemon juice
  4. 1 tsp of rose water
  5. 1 tsp orange blossom water

Step 2: The Stuffing

Start by preparing the stuffing:

Mix the walnuts, sugar, the rose water and the orange blossom water together. Mix them well until all the walnuts are coated with sugar, rose water and orange blossom water. Put them aside to soak and prepare the pancakes.

Step 3: The Pancakes

Start by putting the eggs in a bowl and whisk them well.

Then add a pinch of salt and vanilla to the eggs and whisk some more.

Then add the liquids to the eggs and the vanilla.

Then add the flour and the baking powder and keep whisking until there are no more clumps.

Heat the surface to 350 degrees and grease It with butter.

Scoop about 30 ml of the batter and pour it on the heated surface, the batter circle should be about 3.5 inches or 9 cm.

Cook them on one side only until the top is dry and bottom is golden brown.

NOTE: there is no sugar in the batter, you will have the chance to add syrup when serving them

Step 4: The Syrup

Put the sugar in a small pot and add the water, turn the heat to medium and keep stirring.

When the water starts to boil squeeze half a lemon into the water and add the rose water and the orange blossom water.

Let it boil until you notice that the water starts to thicken, it should take about 6 to 7 minutes.

Remove from the heat and pour it in a gravy bowl to cool down.

It will thicken more as it cools.

Step 5: Assemble the Atayef

Take a pancake and put about a teaspoon of stuffing in the middle, wet the edges with water using a small brush and fold it pressing gently on the edges until the edges stick together.

Keep doing this until you run out of ingredients.

This recipe yielded 54 pieces.

Place two pieces in a plate and drizzle syrup (as much as you like)
