Introduction: Avo-Eggy

The perfect protein and healthy-fat breakfast! Eggs are the original superfood

Step 1: Quick Prep

You will need: an avocado, an egg, ovenproof baking dish, salt

optional toppings: hot sauce, salsa, cilantro, lime, pepper, cheese

Preheat oven or toaster oven to 400 degrees. Place a generous amount of salt in the ovenproof dish. Halve the avocado and scoop out a hole big enough for the egg. Nestle avocado into the salt...this will prevent it from rolling over and spilling the egg. Dribble some hot sauce in the hole.

Step 2: Bake It!

Crack the egg into the hole and place baking dish in the oven. Bake for 10-15 minutes until egg is cooked to your preference. Top with extra hot sauce, salsa, cheese, salt and pepper or cilantro. I love to scoop the filling out with tortilla chips. Salt can be reused.

    This sounds so good! I love avocados but my bf and his son are not fans. They're crazy!

    Ah ha! That salt tip is really helpful. I've tried a similar recipe in the past and mine would always dump the egg right out. Thank you!
