I will show you how to make great french fries the South African way.
What you will need.
White wine vinegar
(It doesn't matter what size pots you use as long as it gets the job done.)

Step 1: Peel Potatoes
I assume most people know how to peel a potato.
But it is not necessary to peel them you can leave the skin on. If you like that sort of thing.

Step 2: Cutting Time
Cut the potatoes into strips. Depending on the size you want them.
Step 3: Blanching Time
Get your larger pot fill it up to a quarter way with water, bring it to the boil.
Once boiling add 1x tablespoon of lemon juice and 1 and a half tablespoons of white wine vinegar.
Add a pinch of salt or two.
Step 4: Boil It Up
Add your cut potatoes to the boiling water, let boil for 10 to 15 minutes.
After that remove and let cool to a luke warm temperature.
Remove potatoes and rinse under cold water. (This removes excess starch)
Step 5: Frying
After rinsing the potatoes, strain the water and shake as much water off as possible.
Ready your oil for frying. Heat your oil until max. To test this drop a small piece of potato into the oil, if it fries rapidly the oil is ready.
Please make sure to add potatoes slowly to avoid spatter from the oil. ( be cautious when working with hot oil) fry until golden brown or to taste.
