So you make poached eggs in a muffin pan in bacon cups. Then you serve that over English muffins with a nice Hollandaise sauce.

Poached Eggs in Bacon Cups

  1. take a muffin pan and put bacon in each cup, shaping each piece of bacon into a cup to hold the eggs
  2. put eggs in the bacon cups
  3. bake at 375° until the eggs are white, but before the yolk hardens

Hollandaise Sauce:

  1. blend on high speed until fluffy: 3-4 egg yolks, 1tsp lemon juice, 1tsp water
  2. slowly pour in 1 stick of clarified, unsalted butter
  3. blend on high speed with salt and pepper to taste
WOW! This looks like a fantastic way to do it! I'm going to try doing it this way, although I think I will bake the bacon into cup shapes and poach the eggs separately.
No way.
Oh wow this looks awesome and I'm sure this tastes great! Love the idea of the bacon cup, thanks for sharing!
Beautiful work! No more egg-poaching... YAY!!! ;-D
You're pretty good at this Instructable writing malarkey dave, perhaps you should do more cooking and less coding.
I can definitely agree with that!
