Introduction: Bacon Salad

Looking for a bacon salad where the main ingredient is bacon, and not something the bacon once ate?  If so, this is the recipe for you.  We have approached bacon salad with the same regards as ham or chicken salad.  Through trial and error we have found the right ingredients to highlight the flavor of the bacon.  Bacon salad has become a huge hit with everyone we have shared it with, and we hope that you have the same luck.

To get started with your delicious, man-style salad you will need these ingredients:

1lb bacon strips
1/4 medium white onion (minced)
1/2 red bell pepper (minced)
1 stalk celery (minced)
1 hard boiled egg (minced)
1/3 cup mayo
1/2 bottle beer (your choice)
1 tsp dark brown sugar
black pepper to taste

Step 1: Mmm Bacon

Now the fun begins.
Start by frying the bacon in a large skillet until crispy.  
Remove the bacon to paper towel lined plate, and dab excess grease with another paper towel.  
Then cut bacon strips into small pieces, and put in a large bowl.

Step 2: Deglaze Bacon Pan

Great, the bacon is cooked and chopped.
You now need to empty the bacon grease from the skillet.  
Make sure to leave all the bacon awesomeness in the bottom of the pan. (the bits and brown stuff)
Then add the 1/2 bottle of beer to the skillet.
Cook this over low heat stirring frequently until the liquid has the consistency of syrup.  
Once you have a syrup, empty the pan into a small bowl and add the dark brown sugar and mix well.  
This is your bacon and beer reduction.

Step 3: Combination Time

Almost done now. 
Mix the onion, bell pepper, celery, and egg in with the bacon bits.
After that add the mayo and bacon beer reduction to the veggie and bacon bit mix.
Stir until completely combined.
Add black pepper to taste.
Now you have bacon salad.
Great on crackers or as a sandwich.
Best served chilled and left-overs should always be refrigerated.
