Bacon and Egg Pie

This Pie is another NON-DESSERT pie. It is perfectly suited for breakfast, brunch or even lunch.  It's easy to make, only 30 minutes! Cooking though, takes around 40 mins. But well worth it. 

Serve with catsup or tomato sauce  

Step 1: Ingredients

Components:

2 sheets puff pastry
6 -8 slices cooked bacon (fried or grilled)
8 eggs (reserve one yolk for brushing pastry)
4 teaspoons milk or 4 teaspoons double cream
1 onion (not too big)
parsley

Step 2: Chop Chop

Chop onion and the parsley.
Whisk eggs putting one yolk to the side.
Whisk in the milk.
Mix the parsley and onion in with the egg mixture.


Step 3: Fry your bacon

Cut the rinds of the bacon (if it's shoulder bacon) and chop.
Cook the bacon lightly and add to eggy mix.




Step 4: Bottoms

Grease your pie tray and layer with pastry. Then prick your bottom with a fork.
Pour eggy mix in. 
Brush the edges with the egg yolk.
Pop the top on and brush with more yolk. Yolk is the secret to good looking pies.

Step 5: Poke it in the oven

It goes into the oven at 350F for 20mins. Then check it's not burning. The edges will cook faster, so as they brown up nice put tinfoil over for the rest of the time in the oven. It will need about 40mins total.

The first pic has nicely browned edges but a very raw centre, so i popped the tinfoil on.

The cooked pie should have a nice bump in the middle. When you stab it with a knife, it should come out clean.

Step 6: EAT IT

CHEESE, CHEESE. thats crazy talk. But a good idea, I wanted to keep it classic though. But i nice bit of sharp cheddar would be good. Sprinkled on top of the eggs.

it's impossible to print this recipe? the website of instructables is not friendly at all and I have tons of friends who want this recipe and we cannot print it and I don't want to have to keep looking at the pics to make it. please put up a link to print this recipe

You really don't need to grease your dish--puff pastry greases its own dish! This sounds really delicious, as schoochmaroo said, like quiche in alt! I do agree with the idea to add additional veggies (so we can pretend it's healthy, lol) and I think I'd add more herbs, too--dill weed would be scrumptious in this.

I used an extra egg (9 eggs total) since my hens are laying small eggs, but this turned out perfect. I'll be making this again!

Sweet! it is good for hen owners. Especially when the eggs start pilling up. Try cracking the eggs straight into the pasty bottom next time. It can generate a nice effect.

It usually comes in a 4'' size, a hand held mobile quiche for brunch on the go
