Donuts

1 Cup of non-fat dry milk or 1 cup of regular milk
1 Tablespoon of butter
1 1/2 Teaspoons of lemon juice
2 1/2 Cups of flour
3/4 Cups of granulated sugar
1 1/2 Teaspoons of baking soda
1/2 Teaspoon of vanilla

Cinnamon Sugar

1/2 Cup of granulated sugar
2 Teaspoons of cinnamon
melted butter

Glazed Icing

1 Cup of powdered sugar
1 Tablespoon of butter
1 Teaspoon of vanilla

Prepare the dry milk as instructed on the package. 5 tablespoons of dry milk to 1 cup of cold water, makes 1 cup of prepared milk. Mix until dissolved. Microwave the milk for 30 seconds, and DO NOT over heat. Add and mix 1 tablespoon of butter, and after it is blended then add 1 1/2 teaspoons of lemon juice, and set the milk mixture to the side. In a separate bowl, sift in 2 1/2 cups of flour, 3/4 cups of granulated sugar, and 1 1/2 teaspoons of baking soda. Blend the dry ingredients, and form a well in the mixture. In the well add 1/2 teaspoon of vanilla and the milk mixture. Blend ingredients together until a dough is formed. On a flat cleaned floured surface, knead the dough for about 10-15 minutes or longer if you choose. Knead and roll the dough into a ball. Take the dough and place into a clean, lightly greased bowl, cover with plastic wrap and refrigerate for about an hour. Once the hour has passed place the dough on a cleaned floured surface and roll out the dough. Using whatever you have around begin to cut out your donuts. I used a cup and a soda bottle cap. Slightly grease a baking pan and place your donuts on the pan. Depending on the type of donuts you are after, the amount you get varies. I was able to get 12, but you may get more or less. Bake for 10-12 minutes at 400 degrees F. Remove from oven, and place on a wire rack for about 5 minutes. While the donuts are cooling, you can whip up the flavors. For the cinnamon sugar, just add 1/2 cup of granulated sugar and 2 teaspoon of cinnamon. Mix together well. Butter the top, side, and bottom of the donuts and dip into the mixture covering all sides. For the glazed icing mix 1 cup of powdered sugar, 1 tablespoon of butter, 1 teaspoon of vanilla, and gradually add milk and mix together. After the you have it all mixed let it set for about 2 minutes, and take  your donuts and dip them one at a time in the mixture and set aside. Yummy!!!!

*Note* As I decided to make donuts at the last minute, I realized I did not have milk nor yeast on hand. The dry milk was a substitute for the regular milk, and I used the lemon juice and baking soda to substitute for the yeast. If you have both of these items on you, then by all means use them. For the regular milk it is still 1 cup, but for the yeast it is just 1 1/2 teaspoons. Hope you guys enjoy.
I made this recipe and they turned out great! I didn't have baking soda so I sub baking powder. I multiplied the called amount of baking soda by 4. I was also very lazy about kneading the dough and chilling for the recommended amount and I fried them in vegetable shortening instead of baking. Very fluffy!!
