Introduction: Baked Eggplant and Peppers Dish
This is a simple and quick dish that can be served with or without meat. I personally prefer to eat it with fish. You will need:
- Green peppers
- Red peppers (optional)
- Olive oil
Step 1: Instructions
Preheat oven to 350º F (178º C). Slice the eggplants, the green peppers and, the onions. Put all the ingredients in a glass Pyrex© like bakeware. Pour a ¼ cup of olive oil over the ingredients. Bake for 20 to 30 minutes adding more oil as needed.
