Introduction: Banana Bread-Cake

Just using the left over bananas I had at home. I'd rather call it a cake when it comes to banana bread due to the texture. This bread-cake has chopped nuts and raisins in it. I wanted to add chocolate chips too but that would be too much *grins*

Step 1: Ingredients and Method

2 c. whole wheat flour

1 tsp. baking soda

1/2 c. oil

1/2 c. honey

1 grated lemon rind

1/2 - 1 tsp freshly squeezed lemon juice

2 eggs

2 ripe bananas

a dash of salt

1 handful nuts, chopped

1 handful raisins

Decoration:

1 envelope Dr. Oetker marzipan icing

Lemon rind curls

Mix together dry ingredients.

Mix oil, honey and lemon rind until smooth.

Beat in eggs one at a time.

Add dry ingredients in 2 equal parts alternating with banana, beating until smooth after each addition.

Add in chopped nuts and raisins.

Pour batter into a large greased and floured loaf or orzgerinc pan.

Bake 50-60 minutes at 350 F degrees (until knife inserted in the center comes out dry)

Cool 5 minutes before removing from pan.

Cool1/2 hour further before decorating.

Marzipan Icing: Follow the instruction on the package. It''s great itself without the icing tho!. Perfect served with a glass of milk, warm chocolate milk, a cuppa tea or coffee.
