Introduction: Beef and Beet Sandwich
Beef and horseradish sauce is great for this sandwich but if you want to go all out, make a beetroot coleslaw with a mixture of apple, red onion and mayonnaise for a wonderful filling. This beef and beetroot sandwich is a treat for the taste buds, especially around the holidays !

4 slices white farmhouse bread
A little horseradish sauce or creamed horseradish
Few sprigs fresh watercress
2 generous slices lean roast beef
1 small fresh beetroot, peeled and grated
1 apple, cored and grated
1/2 red onion, finely sliced
2 tbsp low fat mayonnaise or thick natural yogurt
Some people prefer to add some mustard ... personal preference
Spread the slices of bread with a little horseradish sauce or creamed horseradish. Share the watercress between two of the slices and arrange the beef on top.
Mix together the grated beetroot, apple and red onion and mix in the mayonnaise or yogurt. Pile on top of the beef, then sandwich together with the remaining slice of bread
