Introduction: Black Bean & Salsa Slow Cooker Chicken

First of all, this is my first instructable, so comments & criticisms welcome!  Second, this recipe is not originally mine, I've modified it slightly to try some new things!

It might not look as pretty as the original recipe's did, but it tasted really good!  That's mine in the picture above:

Step 1: Ingredients

It's a little blurred, but you need:
1 lb. of chicken (not shown - hopefully you know what chicken looks like!  I think I actually ended up with about 1.5 lbs.)
1 can of Cream of Mushroom or Cream of Chicken Soup (I used chicken)
1 Cup of Salsa (Mine all came out really fast, and was about 1 1/2 cups, I just went with it!)
1 packet of Taco Seasoning (I used Chicken Taco Seasoning)
1 Cup of Sour Cream (Not pictured till later, because you don't need it till later!)

Optional
Cheddar Cheese
Beans

I decided to add black beans to mine, and I didn't take a before picture, but there was 1 cup of dry beans, I soaked them overnight in Chicken Broth (Couldn't find anything online saying you couldn't, everyone just uses water, so I thought HA, I'll try something different!!)  They doubled in size after about 10 hours, I just soaked them overnight.  It isn't the greatest comparison picture, but the beans on the left were before soaking, beans on the right are 10 hours later.  So mine had 2 cups of black beans, too - to my wife's displeasure. :)  (Only because she doesn't like beans....not because of their musical qualities!

Step 2: Plan Ahead...

Just put your chicken, cream of soup, beans if you're adding them too, and salsa in your crockpot.  I assure you, there is chicken under there!  Then sprinkle the taco seasoning on top.  Now the recipe I was following didn't say to mix it, but mix it I did.  I wanted everything to be together, from beginning to end!

Set it on low for 6 hours, and fugget about it!

I also wasn't thinking until after I added the last ingredient, if you have some of these crockpot liners, use them.  They just make life easier!

Step 3: Nice Buns....

I also decided that even though I was serving this on rice, I wanted rolls too - don't judge, I'm a big guy!

These Rhodes Rolls are awesome, you just spray your pan and cover with saran wrap that's been sprayed too.  Let it rise for 6 hours too - convenient, isn't it?!

And look how nicely they rise!

Step 4: Final Steps...

After the 6 hour mark, you can shred the chicken if you didn't cut it up before like I did, or if you want shredded chicken.  Then you add your 1 cup of sour cream and mix - I also added some cheddar cheese to the top.  I don't know if the cheese was really necessary, as we still put it on afterward, and scooping it out didn't really work.

Then just let it heat back up!  I think mine went for another hour, maybe an hour and fifteen minutes.

Step 5: And Now Enjoy!

I didn't get a picture of the rice I used, its just a steam in the microwave wheat rice that takes about 4 minutes - mine must have went too long or something, because it shot out all over!

But it was still delicious!  Hope you enjoy, I know I did!
