I love grilling pizzas, I typicaly flip a cookie sheet up side down on the grate, turn the grill up to full blast and place my pizza pan on top after the grill temp has maxed out. My favorite is a goat cheese, with sauteed onions and roasted garlic. I am allergic to dairy, soy, corn to name a few so I have to come up with alternatives.

BUT life is uncertain EAT DESERT FIRST......

Here is my black forest pizza with white chocolate crumble topping.

It starts with a crust modified from my biscotti receipt, adds a cherry sauce, and finishes with a white chocolate crumble topping for the cheese.

lets get started .... Total time 40min or so plus cool down....

Step 1: Crust

The biscotti crust is stupid easy:

Set the oven at 350

2 C  Flour
1/2 C Dark Chocolate powder
1 1/4 C Sugar
1/4 tsp Baking Soda
Pinch of Salt

3 Eggs
1 TBLS veg oil (canola)

In one large bowl mix the dry, sift together for a smoother consistency.
In a smaller bowl add the 3 eggs, and oil, mix and add to the dry.

The best way to mix the wet and dry is with your hands. It will seem like there is not enough liquid, but it will work out. Take a look at the pictures.

flatten the dough out on a lightly floured surface, use a frosting spatula to lift the dough off to a pizza pan.

Bake for 20min or so, check with a fork that is comes out dry.

Step 2: Sauce

The sauce is basically a cherry pie filing, that I thicken with Arrow Root in place of corn starch

1 12oz bag of frozen cherries
3/4 cup Sugar
1 1/2 TBLS Arrow root
3 TBLS water

Throw all but 6 large cherries in a pan and heat until it start to thicken. You may want to smash the cherries with a fork while they are cooking.

Step 3: Crumble Topping

Add it or not, this is the weakest part of this pizza it kicks up the sweetness and the kids love it. For an adult version cut back on the sugar.

Ingredients
1/2 C Flour
2/3 C Sugar
1/2 cup coconut shortening (or butter)
1 Bar white chocolate (57g)

Grate the chocolate put it aside

In a medium Bowl combine the flour sugar and stir together, add the shortening and cut it in with a fork. Add in the grated white chocolate.

Step 4: Bring It All Together

Once the dough is cooked, pull it out and place on a heat proof surface.
Poor on the sauce, and top with the crumb mixture.
If you saved 6 cherries you can slice them and place on the crumb as toppings. Or use other berries.
Bake for another 10min or until the topping has melted, you could hit it with the broiler for a slight toast, but be careful.
