Introduction: Blackberry Blondies

I love blondies. Easy to make and super tasty, they take a variety of add-ins well. Blackberries were on sale this week, so I chose to put them in some blondies for the family. I hope you enjoy these as much as they did.

Ingredients:

  • 1/2 cup butter, melted
  • 1 large egg
  • 1 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 lbs blackberries

Step 1: Preheat and Grease

Preheat oven to 350 degrees Fahrenheit and grease an 8x11 glass baking dish.

Step 2: Butter and Sugar

Combined butter and sugar in a stand mixer fitted with a spatula edge beater blade. I also like to use a plastic lid with a hole cut in it as an inexpensive but effective splash guard.

Step 3: Eggs and Stuff

Add the eggs, vanilla, and salt and mix until blended and creamy.

Step 4: Flour

Add a little flour at a time and mix until all the flour is incorporated into the batter.

Step 5: Berries

Add the blackberries. I like to beat mine in fairly well so that the blackberry flavor is mixed well into the batter. If you prefer your blackberries in larger chunks, slice them and fold them in by hand.

Step 6: Bake and Enjoy

Scrape batter into the greased baking dish and bake at 350 degrees Fahrenheit for 35-45 minutes, until a toothpick inserted into the center comes out clean and the top is firm and brown. Allow to cool.
