When I was little, my family watched Good Morning America. Every now and then, they'd have recipes on the show. Dorito Casserole was one that became a tradition at my house. As I grew older and began to travel and cook, I acquired a love for New Mexico cuisine. The following recipe is the food Child of the two, and is the best recipe for Dorito casserole that I have ever tasted.
You will need the following ingredients:
• 1 Family Sized Bag of Doritos (save 2 cups for casserole topping)
• 1 onion (optional)
• 1 regular can of chili beans
• 15-ounces of green enchilada sauce
• 8-ounce can tomato sauce
• 1½ cups of shredded Mexican blend cheese
• 1-2 cans of green chilies (or homemade if possible)
• 1 rotisserie chicken breast (or grilled)
• 2 cups Doritos
• 1/2 cup of shredded Mexican blend (or WAY more)
• 1¼ cups sour cream
• (optional) a few leftover green chilies for aesthetics
Step 1: Preparation
-(optional) Sauté the onion with a little bit of salt, pepper, and olive oil.
-Preheat oven to 375 degrees F (about 190 degrees C).
-Crumble 6 cups of Doritos with your hands into a large mixing bowl
Step 2: Cook!
-Add the onion, the chili beans, the chicken breast, the green enchilada sauce, tomato sauce, most of the green chilies, and 1½ cups of shredded Mexican cheese to the crumbled Doritos.
-Place mixture into an 8½ x 11-inch oven-proof casserole dish.
-Bake for 20 minutes.
-Remove from the oven.
-Spread the sour cream over the top of the casserole with a large spoon or rubber spatula.
-Top with remaining 2 cups Doritos.
-Sprinkle with the 1/2 cup of the shredded Mexican cheese (or WAY more. I pile like 3 cups of the stuff on there)
-Bake for 5 minutes
Step 3: EAT
I, personally, like to decorate the end result with Doritos, green chilies, and sour cream (as demonstrated in the first picture) but that's up to you!
Sharing need not occur.
For best results, shovel directly into mouth-hole.
