You will need: 4 cups bread crumbs 4 eggs 1 cup milk 1/4 cup craisins (you can use raisins instead) 1/4 cup dried apricots 1 tablespoon cinnamon 1 teaspoon ...
In a mixing bowl combine (with a fork) eggs, milk, sugar, oil and vanilla.
Cut up the dried apricots and add them to the bread crumbs along with the craisins and cinnamon. Stir well.
Pour the egg/milk mixture over the bread crumbs and stir well until all of the bread crumbs are moistened.
Pre-heatt oven to 350 degrees. Spray 8" x 8" baking pan with non stick spray. Pour bread pudding batter into pan. Bake for 1 hour, uncovered.
This is a great dish to take to a potluck or office party.
