Introduction: Breakfast Hash
Eggs, breakfast sausages and hashbrowns... sounds like a normal breakfast right? This breakfast hash has all the regular foods but cooked together in a unique way that makes it a bit more interesting.
Try it with veggies, add other breakfast meats, use a different cheese; whatever way you want it, this is a way to take breakfast to another level.
Step 1: Ingredients
For this hash, you'll want breakfast sausages, eggs, hashbrowns, and cheese. Add some pepper or fresh herbs as well.
Cook the sausages in a frying pan on medium high heat and cut them into little chunks.
The hashbrowns are in chunks as well and were baked in the overn at 375F for 30minutes with some cajun seasoning and olive oil.
Grate the cheese. This cheese is a sharp cheddar.
Step 2: Fry Potatoes and Meat, Then Egg
In a frying pan, heat up the hashbrowns and sausages to get them warmed and crisped. Then add two eggs to the hash and allow them to cook a bit on the bottom of the pan. You can add some pepper to the tops of the eggs.
Have the oven on high broil ready to go.
Step 3: Broil and Serve
Once the bottom of the eggs have been cooked a bit, add cheese to the top of the hash and put it in the oven on high broil.
It will take about 3 minutes to get the cheese fully melted and a bit golden. Remove when the tops of the eggs are cooked with the yolk still soft (give more time if you like a harder yolk).
Tip: shake the handle of the frying pan to test how "wiggly" the egg yolks are so that you gauge their softness.
Take a spatula and carefully remove the whole hash onto a plate. Garnish with fresh chives (or other herbs).
