(The big 167G120 transformer does hum a little I've noticed, any ideas on what to do about that? I think it's most likely just the construction of the transformer itself, so maybe I just need to upgrade)

Transformers will induce their fields into nearby conductors ("coupling"), so proper design requires coils aligned on different axis in order to not inject noise into the other inductors. From the photo it appears that all the transformers are aligned on the same axis. Since there are only three axis and you have 5 trannys at least two will need shielding. The cans that tea or coffee come in are functional and offer a zany aesthetic. The shielding must be grounded of course to drain that pesky noise.
