Introduction: Butchering an Inside Round
well, we want to save money on beef. so how do we do it? we cut our own meat, thats how. A lot of big box stores, costco, restaurant supply stores, butches, sell what are called primal cuts. basically what this is is a big hunk of uncut up meat. the whole shoulder, inside round, whatever.
you can usually find this cheaper than you can find the individual cut meat.
so, the trick is to buy it cheap, and then cut it ourselves.
you're going to need a nice clean surface for this one, and a nice sharp knife.
