What better meal is there than pancakes for a lazy weekend breakfast?

If you've never made buttermilk pancakes before then you're really missing out! Using buttermilk instead of milk makes them so much lighter and fluffier, add a caramel sauce to that and some delicious strawberries and you have a breakfast to die for!

So get the whole family together to make this scrumptious brekkie!

Step 1: Ingredients

This recipe makes enough for about 5 or 6 servings.

  • 2 cups self raising flour
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 600 ml Buttermilk

Caramel Sauce:
  • 2/3 cup thickened cream
  • 3/4 cup firmly packed brown sugar
  • 50 grams butter
  • 1 teaspoon vanilla essence
*Note that this caramel sauce freezes really well! So you can freeze any leftovers, and just reheat in the microwave anytime*

I'm in the UK, can I just substitute thickened cream for double cream? Or is it something very specific? (As far as I can see, thickened is only really in Australia.)
Yep, you can substitute double cream. in Australia double cream is just a thicker version of thickened cream.
Thanks. These are now in the run for next week's shopping!
I'd eat this!
I'm at work, haven't eaten my breakfast ...just looking at this and drooling. They look so delicious. I'll send a link to my wife...maybe I'll get lucky :D
Good luck! I hope she makes them for you, they are yummy as! :)
