Introduction: Butterscotch Peanut Butter Mocha Cookies

About: My sister and I enjoy making food, especially desserts to share with others, and we have tons of fun in the kitchen!

This is a fun treat my sister and I enjoy making and serving to family and friends during Christmastime.  Many people gather in the kitchen to watch the making of the tree and eat this delicious treat!

Step 1: Making the Cookies

2 1/2 cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 1/4 cups dark brown sugar
1 1/4 cups white sugar
1 cup softened salted butter
3 eggs
2 tsp vanilla extract
2/3 cup creamy peanut butter
1/3 cup hot water with
1 tbsp instant coffee(2 packets Starbuck's Via)
1 bag butterscotch chips (anything equaling one bag will work.  We used 1/2 white chocolate and 1/2 butterscotch)

Preheat oven to 350 degrees
In medium bowl combine first four ingredients.  mix well, and set aside. 
In large bowl blend both sugars with electric mixer on medium speed.  add butter and mix well, then add eggs and vanilla and mix.
In small ish bowl add coffee to hot water, stir until coffee disolves, and add peanut butter.  This consistency should be grainy.
Add coffee/peanut butter to sugar/butter mixture, stir well, and add flour to everything.  Make sure everything is mixed well(If batter is too runny, add more flour) and finally add the baking chips.
spoon onto greased/parchment paper-covered cookie sheets and bake 14-16 minutes, or until somewhat golden on the edges.

Step 2: Easy Green Frosting

1 cup softened butter
3 1/2 cups confectioner's sugar
1 tsp milk
1 tsp vanilla extract
1/8 tsp salt
4 drops green food coloring

combine butter, sugar, and salt.  Beat well, and add milk, vanilla extract, and food coloring and continue to mix until smooth.

smoothe onto cooled Butterscotch Peanut Butter cookies to create the Cookie Christmas tree!  Add decorations as you please.
