Caffeine Mocha Rum Cake

Coffee cake is cake that goes with coffee, but what about substituting the cake for the coffee? What if you were able to get all of the caffeine and cake at the same time? And here we are with Caffeine Mocha Rum Cake. The whole cake here has 800 mg of caffeine in it, roughly 8 cups of coffee's worth. So eat a 1/8th slice and you're good to go! It's a bit of an overload and really tasty.

Step 1: Ingredients and supplies

Ingredients
  • cocoa powder for dusting
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 3/4 pound bittersweet chocolate chips
  • 3 sticks (1 1/2 cups) unsalted butter, cut into pieces
  • 1 1/3 cup dark rum
  • 1 cup kahlua
  • 2 1/4 cups granulated sugar
  • 800 mg caffeine powder* (optional)
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • powdered sugar
  • whipped cream
Supplies
  • Mixer
  • Two bowls
  • Bundt or angel food cake pan
Preheat oven to 300F

* Caffeine powder is not something to be played with, the cake is great without it. I used a very sensitive scale to measure this out, but one teaspoon is the equivalent of 20 cups of coffee so guessing is bad. If you were to do this, I'd recommend crushing up No Doz instead for a more easily measured amount.

Baked! Wow, that was a beautiful cake! I am amazed at how decident, moist and rich the flavour was, yet the 'skin' was nice and crispy!

We did not have Kahlua, so I used amerula (cream) liquor with extra rum. Also substituted the caffine powder with 100ml of espresso grounds.

If you need another excuse for coffee the best one if you are female is that coffee deters breast cancer. My family is high risk for BC but my doctor told me I've killed that out - and my daughter will never have to worry about BC - she has a better chance of winning the lottery thanks to my caffeine/coffee addiction. So drink up...or eat up as the case may be. Save the ta-tas!

If you need another excuse for coffee... I didn't need one, but now I have a trump card if my girlfriend (who studies medicine) has a talk with me about my coffee habit! Respect!

You drinking caffeine isn't going to change your kids' genetic susceptibility to disease. Perhaps you extrapolated a bit too much from the doctor's comments?

Don't understand the reason for this comment at all. Moderation is important in all things, except for coffee of course.

According to the site listed by bwinteler below:
alcohol added to boiling liquid then removed from heat - 85% left
baked/simmered for 2 hours - 10% left

that works out to 8.5% of the alcohol left in the cake. We started with 2.3 cups of alcohol or 18.4oz. that leaves us with 1.56oz (or one shot) left in the whole cake. since the cake is intended to be eaten in 1/8th slices, that means that there is .195oz in a slice.

but wait there's more!
Kahlua is only 40 proof. a normal shot proof is 70-90 proof. so 1 cup of our 2.3 cups alcohol is only half strength. to save MORE tedious math time lets estimate that as 1/5th less alcohol.

that brings us down to .156oz per slice...

TLDR: 0.156oz per slice of cake. not enough to do anything, and in the gray area for what you could even give your kids some of.

A lot of it cooked off. If it didn't, one 1/8th slice would contain close to 2 shots worth of alcohol. As far cooking without, I have no idea.

Oops, off on the math. Just a little over one shot per slice. Still, that definitely didn't stay in there.

Am I correct in assuming that omitting the caffeine WON'T affect the flavor? I love mocha, and rum is definitely a nice flavor note to add to the mix. I'm absolutely going to make this one!

Coffee is also good for the liver, there's another good excuse (there are no figures as to how much coffee one should drink to counteract alcohol though.)

The alcohol bakes off in the oven so there isn't any left in the cake. Cakes are baked at a high temperature that boils off the alcohol. The flavor is all that is left behind.

This sure sounds like a great cake!

Yeah, we were calling it the Four Loko of cakes. The caffeine and sugar push you right through any food coma.
