This delicious sandwich filled with fresh ingredients is perfect for warm summer days.

Ingredients:
1 Rhodes Mini Baguette, baked following instructions on package

pesto

3 slices fresh tomato

2 slices fresh mozzarella

3-4 fresh basil leaves

balsamic vinegar

Instructions:
Cut baguette in half lengthwise. Spread pesto over bottom half of baguette. Top with tomato slices, mozzarella slices and basil. Drizzle with balsamic vinegar. Cover with baguette top.

Great idea, never thought of this as a sandwich, going to try this in the AM. <br> <br>One note: for caprese salad I use a Balsamic vinegar reduction so it is more of a sauce and doesn't run off too much.
