What would happen if it didnt have the pole for support? Would it sag?

I put the pole because the design in the book had this, but with this shelf, I placed heavy cans and bags underneath and they haven't made the shelf sag at all. I think the ply of the cardboard (3-ply) I used made it quite sturdy. I think trying it out is the best way to find out.
