- 500g carrots
- 300g sugar
- 125g flour
- 5 eggs
- 1 teaspoon baking powder
Peel you carrot and cut them into pieces. Put them into a pan with water and let them boil. When boiled take the water out of the pan and blend the carrots. Pre-heat your oven at 170ºC. Separate de egg whites from the egg yolks. Beat the egg whites until they are foamy. Add the remaining ingredients to the egg yolks and beat them together. Fold in the egg whites. Spread the mixture into an oven tray. This goes to the oven for 45/60 min. When the cake is ready flip it over into a kitchen towel and remove the grease proof paper. With the help of the towel roll it carefully. Spread some sugar on top.
