After making up a batch of Cheddar Bay biscuits, I decided that to really liven up brunch, they needed eggs - Benedict style!

Eggs Benedict is traditionally served as two halves of an English muffin, topped with ham or bacon, poached eggs and Hollandaise sauce. But I don't like English muffins, I don't like ham, and Hollandaise sauce is just too much for me!

These pictures tell the tale of how to assemble the perfect Cheddar Bay biscuit Benedict.  Start with fresh Cheddar Bay biscuits.  Add a slice of tomato, some crisp bacon, perfectly poached eggs, and top with fresh cracked pepper and chopped chives.  Since I'm not a big fan of Hollandaise sauce, I didn't add any, but next time will definitely include a cheese sauce of some sort - perhaps Mornay.

I made these today. INSANE ALL DAY ADDICTION. I scoochmaroo a big smoocharoo! Try it paleo style e.g. replace the biscuit with sweet potatoes. Awesome!!!!!!

Oh wow, that looks delicious! Personally I'd probably add a mustardy Bearnaise sauce - it would probably be nice with the freshness of the tomato and salty bacon. Perfect call with the biscuits too - they look fantastic!

Oh these look perfectly delicious as is. I agree the hollandaise would overwhelm your scrummy looking biscuits. Maybe if anything some avacado might be good.
