Cheesecake Pie with Fruit
A really easy no-bake cheesecake! This is my grandma's recipe - my mom made it last year for Christmas and everyone loved it! You can use any sort of fruit you like on top - the traditional version uses canned cherry pie filling, but I used fresh strawberries to create my own topping.

The first photo is the pie without the glaze... it is much prettier that way, but doesn't taste quite as good. :D

Step 1What you'll need:

for the crust:
  • 1/4 cup sugar
  • 1 1/4 cups crushed graham crackers
  • 6 tbsp melted butter
for the filling:
  • one envelope Dream Whip
  • 1/2 tsp vanilla
  • 1 1/4 cups powdered sugar
  • 1/2 cup milk (I used soy milk because it's what I had on hand, and the filling came out softer than normal)
  • 8 oz cream cheese, softened
for the strawberry topping I made:
  • 12 oz fresh strawberries or 3 cups
  • 1/3 cup sugar
  • 1/2 cup water
  • 2 tbsp cornstarch
You can also use a can of pie filling for the topping.

Wow this looks beautiful and delicious!!! The graham cracker crust is also my favorite - much better than any store-bought crusts. My mom used to make it like this when I was growing up. I will make this sometime soon! Thanks!

You could probably lay down the glaze first and then arrange the strawberries on top. To prevent the fresh fruit from getting icky, you could either put them on just before serving or toss them with some of the glaze, an acid such as lemon juice, or confectioner's glaze before arranging them.

I was going to say the same exact thing about the strawberries.

It sure does look yummy. I have not purchased Dream Whip in years and I have put it on my grocery list along with some fresh fruit (blueberries) or maybe might have to get frozen by now.
