I made these cupcakes for my father's birthday, this last April. We're big fans of cherry limeade, and I wanted to try my hand at creating this awesome drink in cupcake-form.
The cupcakes were a basic butter cake, with the addition of limeade concentrate and lime zest to the batter (I also added some neon green food coloring). After baking, I poked the cupcakes while they were still warm and drizzled them Tres-Leche-Cake-style with limeade-infused simple syrup.
The cupcakes were really, really, really good. The tartness of the limeade-cupcake was perfectly complimented by the sweet cherry-buttercream icing. These were especially good served with vanilla icecream.
I think I'm going to a second installment of these cupcakes. I really wanted the cherry flavor to be more prominent, but they were still delicious!
