Introduction: Cherry White Chocolate Chip Muffins
I woke up this morning and I was like "Hey, I should create a recipe!"
And so I did.
I wanted something tasty. That could be baked. Muffins sounded good. And fruit. I like fruit. And chocolate. Hey, it's almost valentine's day, red fruit and white chocolate? Hmm... what about a base recipe? Ooh, let's make that.
So I spent a bit creating a base recipe, then modified it to hold the cherries and white chocolate. It came out tasty, so I decided to share.
My photos were inspired by those in How to Write an Instructable class (link), so I'd like to thank jessyratfink for that.
Let's just make the food.
Step 1: Gather Your Supplies
- 2 1/2 cup flour
- 1 cup sugar
- 2 tsp baking powder
- 1 tsp salt
- 1 cup milk
- 2 beaten eggs
- 1 tsp vanilla extract
- 1/2 cup butter
- 1 cup chopped sweet cherries (or more)
- 1 cup white chocolate chips (or more)
And just getting it out there while it's early:
PREHEAT YOUR OVEN TO 350º!!!
Step 2: Combine the Dry Stuff
In a large bowl, mix together the flour, sugar, baking powder, and salt. Set aside.
Step 3: Combine the Wet Stuff
In a medium bowl, mix together the milk, the beaten eggs, the vanilla. Melt the butter in your microwave. Set aside.
Step 4: Add Your Cherries
Chop up your cherries so you have one cup of them. Add them into the flour, covering the cherries in flour to help them not sink.
Step 5: Combine Everything
Pour the wet stuff and the melted butter into the dry stuff. Mix until evenly moistened, then fold in the white chocolate chips.
Step 6: Bake!
Line your muffin pan and then, scoop your batter into it. Then pop them in the oven for 15-25 minutes (20 worked perfectly for me, I'm giving you and your oven wiggle room)
I got 16 muffins from one batch.
Step 7: Eat
The muffins are tasty. Eat them.
My mom suggested adding a spice to the batter to help differentiate it from the white chocolate chips. My brother wanted less chocolate, more cherries. My sister wanted more chocolate, less cherries. My dad liked them the way they were. So you can tweak the recipe to your taste buds.
